I am one of the latest to jump aboard the healthy smoothie and raw foods trend and I am hooked! My friend Erin recently started making blended green-smoothies and  invited me over to sample the Exotic Endurance smoothie found in the “Raw Food Cleanse”  by Penni Shelton. I’m hooked, this golly green juice is D-lish!

Erin lives a healthy lifestyle and is doing a great job ensuring that her kids do so too. She invites her kids into the kitchen to assist in making these drinks, which she makes every afternoon! She gets her ingredients from her local Farmer’s Market or at Trader Joe’s, Whole Foods, Grow  and Costco. Grow in Manhattan Beach also offer delivery the following morning for orders place before 8pm the previous night! 

 She stores the juices in individual containers for easy, on-the-go drinks. Since Erin started drinking a variety of raw drinks, she has noticed an overall improvement in her well-being. She has more energy and feels good about herself. To my surprise this recipe is not only delicious and healthy, it’s SO easy!

Erin is one of my latest friends to invest in a Vitamix, but if you haven’t taken the plunge into investing in this fancy juicing gadget yet like myself, a regular blender will do the trick as well. Only, the blender doesn’t self clean like the Vitamix does. That machine is amazing!

Ingredients:

  • 2 large handfuls of organic spinach
  • 2 large handfuls of mixed baby greens
  • 1/2 cup alpha alpha sprouts
  • 1 tablespoon of chia seeds
  • 1 tablespoon golden flaxseeds, ground
  • 1/2 small pineapple, peeled, cored and sliced
  • 1 small banana
  • 1 cup water – Erin substitutes this with coconut water

Directions:

Combine all ingredients in blender until smooth. Viola!

*This Smoothie stays fresh refrigerated for up to three days.

    Where does she get the individual containers to store the juice for on-the-go drinks?!?

    I bought the containers online. They are Tupperware. They are PBA free. I was storing in glass but my husband was afraid I was going to brake one since I had so many in the fridge. That would be a big mess. The compromise is working.

    Also the chia seeds should be soaked for 15-20 minutes. I just put it in the blender to e it sit.
