Feta and Mint Watermelon Salad

I love serving watermelon in the summertime! Eating watermelon is delicious way to stay hydrated in the summer and this is loaded with health benefits!! Watermelons are an excellent source of several vitamins: vitamin A, which helps maintain eye health and is an antioxidant; vitamin C, which helps strengthen immunity, heal wounds, prevent cell damage, promote healthy teeth and gums; and vitamin B6, which helps brain function and helps convert protein to energy.

While watermelon is simply delicious eaten directly off the rind, I have found myself making this watermelon salad for nearly every cookout and potluck this summer. It is the perfect addition to any summer meal and couldn’t be easier to make with only a few ingredients needed.

Ingredients:

  • 1 small watermelon
  • 2-3 sprigs chopped mint
  • 1/2 c crumbled feta cheese
  • Reduced balsamic vinegar

Directions:

  1. Cut watermelon into cubes.
  2. Sprinkle with chopped mint and crumbled feta.
  3. Drizzle reduced balsamic vinegar over fruit, herbs and cheese.
  4. Serve cool!
 
*For a slightly different twist, try using basil and goat cheese instead of mint and feta cheese!

    This is a fantastic recipe for entertaining and to incorporate a nice salad with a summer meal. I prepared all of it ahead of time even the reduction since we were camping. It was so easy to assemble on the trip.
