Over a year ago, I eliminated all dairy from my diet for health reasons. Once I eliminated it, I felt SO much better, which made it easier to stay motivated to avoid eating dairy. Before that time, I ate ice cream every single night for as long as I can remember. I can remember my parents making me a bowl of ice cream or a milkshake after dinner as a child. Eating my ice cream was a comforting routine and a treat I looked forward to at the end of each day. Avoiding ice cream was by far the hardest part of eliminating dairy from my diet. I mourned the loss of my nightly ice cream indulgence. I tried soy ice cream and sorbets and some of them were okay, but none of them really hit the spot like real ice cream. Since last June, I have been on a quest for a yummy, satificying, creamy dessert that fits my non-dairy lifestyle.
Thanks to Pinterest, I recently stumbled upon a recipe for dairy-free fudgesicles. Whipping up a batch to freeze was super easy and and my taste buds were so happy when I tried my new dairy-free, chocolately treat! Yum!
Here’s what you’ll need:
- 1/2 cup coconut milk (the recipe called for full fat canned coconut milk, but I had some coconut milk in my fridge and it worked perfectly)!
- 2 small ripe bananas
- 1/2 tsp vanilla extract
- dash of salt
- 2 T cocoa powder
- peanut butter (optional)
Directions:
- Add all ingredients to a blender
- Blend until smooth and mixed
- Pour fudgesicle mix into popsicle molds
- Place in freezer until frozen solid
- Enjoy!
